- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Cook lasagna noodles in salted boiling water until al dente for 8-10 minutes. Drain and rinse them briefly under cold water.
- In a large skillet, heat olive oil. Sauté the onion until translucent, then add garlic, mushrooms, thyme, salt, and pepper. Cook until mushrooms are tender, then stir in spinach until it wilts.
- Spread marinara sauce on the bottom of the baking dish. Layer noodles, ricotta, mushroom spinach filling, and cheeses. Repeat layers, finishing with sauce and cheeses on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake uncovered for an additional 10-15 minutes until bubbly and golden.
