Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook lasagna noodles in salted boiling water until al dente for 8-10 minutes. Drain and rinse them briefly under cold water.
  3. In a large skillet, heat olive oil. Sauté the onion until translucent, then add garlic, mushrooms, thyme, salt, and pepper. Cook until mushrooms are tender, then stir in spinach until it wilts.
  4. Spread marinara sauce on the bottom of the baking dish. Layer noodles, ricotta, mushroom spinach filling, and cheeses. Repeat layers, finishing with sauce and cheeses on top.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake uncovered for an additional 10-15 minutes until bubbly and golden.
  6. Let the lasagna cool for about 10 minutes before serving.
