- Start by horizontally slicing the chicken breasts to create four cutlets for even cooking. Season each piece with salt, black pepper, garlic powder, and paprika.
- In a large skillet, heat olive oil and butter over medium-high heat. Add the seasoned chicken cutlets and cook each side for 4-5 minutes until golden brown.
- Place a slice of fresh mozzarella on top of each cutlet in the skillet, cover with a lid, and let the cheese melt for 2-3 minutes.
- Reduce heat to medium, add minced garlic, and sauté for about 30 seconds. Pour in chicken broth and scrape the brown bits from the skillet.
- Stir in heavy cream and grated Parmesan cheese, along with Italian seasoning, and allow the mixture to simmer for 2-3 minutes.
- Add chopped fresh basil and return the chicken cutlets to the skillet. Simmer for an additional 2-3 minutes.
