Preparation
  1. Start by horizontally slicing the chicken breasts to create four cutlets for even cooking. Season each piece with salt, black pepper, garlic powder, and paprika.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Add the seasoned chicken cutlets and cook each side for 4-5 minutes until golden brown.
  3. Place a slice of fresh mozzarella on top of each cutlet in the skillet, cover with a lid, and let the cheese melt for 2-3 minutes.
  4. Reduce heat to medium, add minced garlic, and sauté for about 30 seconds. Pour in chicken broth and scrape the brown bits from the skillet.
  5. Stir in heavy cream and grated Parmesan cheese, along with Italian seasoning, and allow the mixture to simmer for 2-3 minutes.
  6. Add chopped fresh basil and return the chicken cutlets to the skillet. Simmer for an additional 2-3 minutes.
  7. Serve the Mozzarella Chicken in Basil Cream over pasta, rice, or with crusty bread, and enjoy.
