  • 1 cup Cooked Brown Rice seasoned

  • 2 tablespoons Fresh Lime Juice or lemon juice
  • 2 stalks Green Onions sliced
  • 1/4 cup Fresh Cilantro chopped
For the Creamy Toppings
  • 1/2 cup Guacamole store-bought or homemade
  • 1/2 cup Vegan Sour Cream or cashew cream
  • 1/2 cup Vegan Shredded Cheese optional
For the Wrap
  • 2 large Flour Tortillas or gluten-free
  • 1/2 cup Salsa
  • 1 cup Shredded Lettuce or spinach

Step-by-Step Instructions for Vegan Burrito
  1. Begin by draining and rinsing one can of black beans and one cup of sweet corn under cold water. Set them aside.
  2. In a medium bowl, combine the black beans and corn with a teaspoon each of paprika, smoked paprika, and cumin. Add fresh lime juice, salt, and pepper to taste.
  3. Lay a large flour tortilla flat on a surface, ensuring it’s warm and pliable.
  4. In the center of the tortilla, layer cooked brown rice, followed by the black bean and corn mixture. Add salsa, shredded lettuce, vegan cheese, sour cream, and guacamole.
  5. Fold the sides of the tortilla, then roll it tightly from the bottom upwards to secure the filling.
  6. Wrap the rolled burrito in aluminum foil to keep it warm. If desired, slice it in half for easier handling.
  7. Serve with extra salsa, hot sauce, or guacamole for dipping.
