- Preheat your oven to 180°C (fan 160°C, 350°F).
- Lightly spray olive oil in the casserole dish and sauté chicken thighs, diced onion, minced garlic, and grated ginger over medium-high heat for 5-7 minutes.
- Sprinkle spices over the mixture and stir well to coat.
- Add chopped carrots, honey, freshly squeezed orange juice and zest, along with chicken stock. Stir until combined.
- Cover and bake for approximately 40 minutes.
- Remove from the oven, stir in chopped courgette, cover again, and return to bake for an additional 20 minutes.
- Remove from the oven, season with salt and pepper, and garnish with fresh coriander.
