For the Casserole
  • 4 pieces Boneless skinless chicken thighs
  • 1 medium Onion Can substitute with shallots
  • 2 cloves Garlic Fresh is best
  • 1 tablespoon Fresh Ginger (grated) Substitute with ground ginger if necessary
  • 2 medium Carrots Can replace with parsnips
  • 1 medium Courgette (zucchini) Can be swapped with bell peppers
  • 1 pieces Juice and zest of 1 orange Lemon can be an alternative
  • 1 tablespoon Honey Maple syrup can be used as a substitute
  • 500 ml Chicken stock Ensure gluten-free if required
  • 2 teaspoons Spices (Paprika, Ground Coriander, Ground Cumin, Chilli Powder, Turmeric, Cinnamon) Can be adjusted to taste
  • 1 spray Olive oil cooking spray Regular oil can be used
  • 1 tablespoon Fresh coriander Omit if not found
For a Thicker Sauce
  • 2 tablespoons Cornstarch Mix with water to create a slurry

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (fan 160°C, 350°F).
  2. Lightly spray olive oil in the casserole dish and sauté chicken thighs, diced onion, minced garlic, and grated ginger over medium-high heat for 5-7 minutes.
  3. Sprinkle spices over the mixture and stir well to coat.
  4. Add chopped carrots, honey, freshly squeezed orange juice and zest, along with chicken stock. Stir until combined.
  5. Cover and bake for approximately 40 minutes.
  6. Remove from the oven, stir in chopped courgette, cover again, and return to bake for an additional 20 minutes.
  7. Remove from the oven, season with salt and pepper, and garnish with fresh coriander.
