For the Jam
  • 5 apricots Fresh Apricots Alternatively use low-sugar jarred apricot jam
  • 1 tablespoon Sugar To enhance the apricot flavor
For the Sandwich
  • 1 loaf Focaccia Alternatively use crusty loaf or sourdough
  • 8 slices Ham Prosciutto or mortadella are excellent substitutes
  • 1 tablespoon Bacon Fat Substitute with olive oil or butter if unavailable
  • 4 ounces Soft Goat's Cheese Brie can be substituted
  • 2 cups Rocket (Arugula) Toss with lemon juice and salt for added flavor
  • 1 tablespoon Lemon Juice Brightens the flavor of the rocket
  • 1 tablespoon Extra-Virgin Olive Oil Optional based on personal preference
  • to taste Salt & Pepper For balancing the flavors

Method
 

Preparation
  1. If using fresh apricots, slice them in half and remove the pits. Place them in a saucepan with a sprinkle of sugar over medium heat. Cook for about 10 minutes, stirring occasionally, until the apricots soften and break down into a jam-like consistency.
  2. Heat a skillet over medium heat and add a tablespoon of bacon fat. Slice your focaccia into thick pieces and toast them for about 3-4 minutes on each side until golden brown.
  3. Spread a generous layer of the apricot jam on one slice of focaccia, add a thick layer of soft goat cheese, followed by the savory slices of ham.
  4. Toss fresh rocket (arugula) with lemon juice and a pinch of salt. Pile this peppery rocket on top of the ham and close the sandwich with the second slice of focaccia.
  5. Slice the sandwich into halves or quarters and enjoy warm.
