  • 1/2 cup Vegetable Oil Can substitute with applesauce.

  • 1 cup Shredded Apple For added sweetness and moisture.
  • 1/2 cup Chocolate Chips For a delightful treat!

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your ingredients and prepare the muffin tin.
  2. Grease your muffin tin or line it with paper liners.
  3. In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.
  4. In another bowl, whisk the eggs, brown sugar, and vegetable oil until smooth and creamy.
  5. Gently stir in the grated zucchini and carrots into the wet mixture.
  6. Gradually add the dry ingredients into the wet ingredients and fold until just combined.
  7. Fold in any optional ingredients like nuts, shredded apple, or chocolate chips.
