Step-by-Step Instructions
- Preheat your oven to 425°F (220°C). Gather your mixing bowls and a baking sheet lined with parchment paper.
- In a large mixing bowl, combine all-purpose flour, whole wheat flour, wheat germ, baking soda, and salt. Whisk until well blended.
- In a separate bowl, whisk together buttermilk, molasses, and melted butter until smooth.
- Pour the wet ingredients into the dry mix and stir gently until just combined.
- Transfer the dough onto a floured surface. Knead lightly for about 30 seconds and shape into a round loaf, scoring a deep cross on top.
- Place the loaf on the prepared baking sheet. Bake for 15 minutes at 425°F (220°C), then reduce the temperature to 375°F (190°C) and continue baking for another 30-35 minutes.
- Once baked, wrap the bread in a kitchen towel to soften the crust while cooling. Allow it to cool for about 20 minutes before slicing.

Notes
For best results, be careful not to over-knead the dough and check the freshness of your baking soda for optimum rise.
