  • 0.5 cups wheat germ Feel free to omit if it’s not on hand.
  • 1 teaspoon baking soda Ensure it’s fresh for the best rise.
  • 1 teaspoon salt Essential for enhancing flavor.
  • 1.5 cups buttermilk Mix milk with lemon juice or vinegar if you don't have it.
  • 0.5 cups molasses Use honey for a milder taste.
  • 2 tablespoons melted butter Coconut oil makes a great dairy-free substitute.

  • Baking sheet
  • Parchment paper
  • Wire rack
  • Whisk
  • Wooden spoon or spatula
  • Sharp knife

Method

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Gather your mixing bowls and a baking sheet lined with parchment paper.
  2. In a large mixing bowl, combine all-purpose flour, whole wheat flour, wheat germ, baking soda, and salt. Whisk until well blended.
  3. In a separate bowl, whisk together buttermilk, molasses, and melted butter until smooth.
  4. Pour the wet ingredients into the dry mix and stir gently until just combined.
  5. Transfer the dough onto a floured surface. Knead lightly for about 30 seconds and shape into a round loaf, scoring a deep cross on top.
  6. Place the loaf on the prepared baking sheet. Bake for 15 minutes at 425°F (220°C), then reduce the temperature to 375°F (190°C) and continue baking for another 30-35 minutes.
  7. Once baked, wrap the bread in a kitchen towel to soften the crust while cooling. Allow it to cool for about 20 minutes before slicing.
