Step-by-Step Instructions for Classic Banana Bread
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with butter or non-stick spray.
  2. Mash about 4 small ripe bananas in a medium bowl until you have approximately 1⅓ cups.
  3. In a separate bowl, whisk together 1.5 cups of all-purpose flour, 1 teaspoon of baking soda, 0.5 teaspoon of salt, and 1 teaspoon of cinnamon.
  4. In a large bowl, cream together 0.5 cup of softened unsalted butter with 0.5 cup each of brown sugar and granulated sugar using a hand mixer on medium speed for about 2 minutes.
  5. Add 2 room-temperature large eggs one at a time, then stir in 1 teaspoon of vanilla extract and the mashed bananas.
  6. Gently mix the dry ingredients into the wet mixture until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top. Bake for 45 to 60 minutes or until a toothpick comes out clean.
  8. Let the bread cool in the pan for 5 minutes, then turn it out onto a wire rack to cool completely.

Notes
