Baking Instructions
  1. Preheat your oven to 350°F (175°C) and prepare muffin pan with liners or cooking spray.
  2. Blend cottage cheese and eggs in a mixing bowl until smooth and creamy.
  3. In a separate bowl, whisk together oat flour, baking powder, and salt.
  4. Gradually fold the dry mixture into the wet ingredients, stirring gently.
  5. Stir in the maple syrup and fold in the frozen mixed berries gently.
  6. Allow the batter to rest for about 15 minutes.
  7. Spoon the batter into the muffin pan, filling each cup about three-fourths full, and bake for 20-23 minutes.
