For the Fruit Filling
  • 300 grams Fruits (e.g., apples or berries) Use ripe and firm fruits.
  • 1 teaspoon Cinnamon Adjust to taste.
  • 5 grams Agar-agar Vegan gelling agent.

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. In a large mixing bowl, combine flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together eggs and plant milk until well blended.
  4. Gradually pour the wet mixture into the dry ingredients and fold gently.
  5. Chop your chosen fruits and fold them into the mixture.
  6. Cook remaining chopped fruits with agar-agar and a splash of water until thick.
  7. Pour half of the dough into the prepared pan, then layer with fruit filling and top with remaining dough.
  8. Bake in the preheated oven for 25-30 minutes.
  9. Let cool in the pan for a few minutes before transferring to a wire rack.
