- In a large mixing bowl, combine the ground chicken, ranch seasoning mix, egg, breadcrumbs, and garlic powder. Use your hands to gently mix until well incorporated.
- Take small portions of the mixture and shape them into golf ball-sized balls, about 1.5 inches in diameter.
- Line a baking sheet with parchment paper and place the formed chicken bombs on it with space in between.
- Preheat your oven to 400°F (200°C) and lightly spray the tops of the chicken bombs with olive oil.
- Bake for 18–22 minutes until golden brown and firm to the touch.
- Remove from oven and place a generous amount of shredded mozzarella cheese on top of each bomb. Broil for an additional 1–2 minutes until cheese is melted.
- Sprinkle with freshly chopped parsley and allow to cool slightly before serving warm.
