  • 1 can black beans rinsed and drained
  • ½ cup feta cheese crumbled
  • 1 cup fresh herbs such as parsley and basil, finely chopped
For the Dressing
  • 3 tablespoons olive oil or avocado oil
  • ½ large lemon juiced

Method
 

Steps
  1. Start by rinsing one can of black beans thoroughly under cold running water. Place a strainer in the sink and allow the beans to drain completely.
  2. In a large mixing bowl, combine the rinsed black beans with about ½ cup of crumbled feta cheese and finely chopped fresh herbs. Gently mix the ingredients with a spatula or wooden spoon.
  3. Drizzle approximately 3 tablespoons of olive oil and the juice of half a lemon over the salad mixture. Sprinkle salt and freshly cracked black pepper to taste.
  4. Gently toss all the salad ingredients together until well combined and the feta cheese is distributed throughout.
  5. If time allows, let the Mediterranean Black Bean Salad sit for about 5 minutes at room temperature to allow the flavors to meld.
  6. Serve the salad immediately in bowls or on a platter, garnished with extra feta and herbs if desired.
