  • 1/4 cup Cilantro fresh
  • 1 cup Tomatoes or cherry tomatoes/pico de gallo
  • 1/4 cup Green Onions or chives

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Peel and cube russet potatoes. Toss them with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
  3. Spread potato cubes on the baking sheet and roast for 25–30 minutes, flipping halfway through.
  4. Cook ground beef (or turkey) in a skillet over medium heat for 5–7 minutes until browned.
  5. Add taco seasoning and a splash of water to the cooked meat, stirring to simmer for 2–3 minutes.
  6. Warm black beans and corn in a separate pot over medium heat for 5 minutes.
  7. Layer roasted potatoes, seasoned meat, and warmed black beans and corn in bowls.
  8. Top with cheddar cheese, sour cream, cilantro, tomatoes, green onions, and jalapeños.
  9. Serve with lime wedges for added zest.
