Method
 

Step-by-Step Instructions
  1. Rinse the quinoa thoroughly under cold water for about 2 minutes.
  2. In a medium saucepan, combine rinsed quinoa with vegetable broth or water. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. Heat olive oil in a skillet and sauté garlic powder for about 1 minute.
  4. Add rinsed chickpeas to the skillet and cook for about 5 minutes until heated through.
  5. Fold the cooked quinoa into the skillet with the chickpeas and garlic.
  6. Stir in lemon juice, zest, chopped parsley, and cilantro. Season with salt and pepper.
  7. Allow the dish to warm over low heat for an additional 2-3 minutes.
  8. Taste the dish and adjust seasoning, then serve warm or chilled.
