Ingredients

For the Fish
  • 4 fillets Sea Bass (6 ounces each) Look for fresh fillets with clear eyes and firm flesh for the best texture.
  • 1 tsp Salt Essential for enhancing the natural flavors of the fish; adjust to taste.
  • 1/2 tsp Black Pepper Freshly ground is preferable for a more robust flavor.
For the Cooking
  • 2 tbsp Extra Virgin Olive Oil This adds richness; you can use less for a lighter dish.
  • 4 cloves Garlic, minced Use fresh garlic for the best depth of flavor.
For the Flavor Profile
  • 1 Lemon, thinly sliced Provides a zesty brightness; zest it for an extra citrus kick.
  • 4 sprigs Fresh Thyme An aromatic herb that pairs beautifully with the sea bass; substitute with rosemary if desired.
For Added Depth
  • 1/4 cup Dry White Wine It brings acidity and complexity; swap with a mixture of white vinegar and vegetable broth for a non-alcoholic version.
  • 1 tbsp Unsalted Butter Adds richness; consider dairy-free margarine for a dairy-free alternative.

Equipment

  • oven-proof skillet

Method

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Rinse the sea bass fillets under cold water and pat dry with a paper towel. Season both sides with salt and black pepper.
  3. Heat olive oil in an oven-proof skillet over medium heat. Sauté garlic for about 1 minute, until fragrant.
  4. Place the seasoned sea bass fillets skin side down in the skillet. Cook for 2-3 minutes until the skin is crispy and golden brown.
  5. Gently flip the fillets, add lemon slices and thyme around the fish, and sprinkle with extra salt if needed.
  6. Pour white wine over the fish and dot with butter pieces.
  7. Transfer the skillet to the preheated oven and roast for 12-15 minutes, until the fish is opaque and flakes easily.
  8. Remove from the oven and let the sea bass rest for a few minutes before serving.
