- Soak wooden skewers in water for 10–20 minutes to prevent burning on the grill.
- In a mixing bowl, combine soy sauce, water, red wine or mirin, brown sugar, and vinegar; whisk until sugar dissolves.
- In a large bowl, mix minced garlic, ginger, ground pepper, and 1/4 cup of the sauce. Add chicken pieces and toss until well-coated, let marinate for at least 10 minutes.
- Bring remaining sauce to a boil, mix cornstarch with cold water to form a slurry, and stir into boiling sauce until thickened, about 1–2 minutes.
- Thread marinated chicken onto soaked skewers, preheat grill or broiler to medium-high, and grill for 8–12 minutes, basting with thickened sauce.
- Serve skewers warm drizzled with remaining sauce and optional sesame seeds or scallions.
