  • 1/2 cup Soy Sauce or tamari for gluten-free
  • 1/4 cup Water to dilute the sauce
  • 1/4 cup Red Wine/Mirin can be replaced with white wine or apple cider vinegar
  • 1 tablespoon Brown Sugar or coconut sugar as alternative
  • 1 tablespoon Vinegar preferably rice vinegar
For the Chicken Marinade
  • 2 cloves Minced Garlic can substitute with garlic powder
  • 1 tablespoon Ginger can use ground ginger
  • 1/2 teaspoon Ground Pepper adjust to preference
For Thickening the Sauce
  • 1 tablespoon Cornstarch or arrowroot powder as alternative

Method
 

Step-by-Step Instructions
  1. Soak wooden skewers in water for 10–20 minutes to prevent burning on the grill.
  2. In a mixing bowl, combine soy sauce, water, red wine or mirin, brown sugar, and vinegar; whisk until sugar dissolves.
  3. In a large bowl, mix minced garlic, ginger, ground pepper, and 1/4 cup of the sauce. Add chicken pieces and toss until well-coated, let marinate for at least 10 minutes.
  4. Bring remaining sauce to a boil, mix cornstarch with cold water to form a slurry, and stir into boiling sauce until thickened, about 1–2 minutes.
  5. Thread marinated chicken onto soaked skewers, preheat grill or broiler to medium-high, and grill for 8–12 minutes, basting with thickened sauce.
  6. Serve skewers warm drizzled with remaining sauce and optional sesame seeds or scallions.
