  • 2 pieces Peaches fresh or canned and well-drained
  • 0.5 cup Honey or maple syrup for vegan option
  • 2 tablespoons Apple Cider Vinegar or white vinegar
  • 0.5 cup Water
  • 1 tablespoon Cornstarch or arrowroot starch

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Season chicken breasts with salt and pepper.
  3. Sear chicken in a skillet with olive oil for 3–4 minutes on each side.
  4. Remove chicken from skillet and set aside.
  5. Sauté diced jalapenos and peaches for 2–3 minutes.
  6. Whisk together honey, apple cider vinegar, water, and cornstarch.
  7. Combine chicken back into the skillet with the glaze.
  8. Bake in the oven for 20–25 minutes until internal temperature reaches 165°F (74°C).
  9. Let chicken rest for a few minutes before serving.
  10. Serve on a platter, optionally with jasmine rice or salad.
