  • 1 teaspoon Baking Soda
  • 2 teaspoons Cinnamon
  • 0.5 teaspoons Nutmeg
  • 1 teaspoon Ground Ginger
  • 3 large Eggs beaten
  • 0.5 cups Oil measured accurately
  • 2 teaspoons Vanilla Extract use pure vanilla
Optional Toppings
  • 0.25 cups Powdered Sugar for dusting
  • 1 cups Whipped Cream
  • 1 scoops Ice Cream vanilla pairs well

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and ginger.
  3. In a larger bowl, beat together the oil and brown sugar until smooth. Gradually add the eggs and vanilla.
  4. Fold in the grated zucchini and mashed sweet potato.
  5. Mix the dry ingredients with the wet ingredients until just combined.
  6. Pour the batter into the prepared cake pan and bake for 35-40 minutes.
  7. Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack.
