Topping

  • 1 cup Chopped Nuts (Pecans, Walnuts, or Almonds) Omit for a nut-free version, or use toffee bits or sea salt for an alternative texture.

Method
 

Preparation
  1. Line a 9×13-inch baking dish with parchment paper for easy removal of the toffee.
  2. Measure out all your ingredients, including unsalted butter, granulated sugar, salt, water, and vanilla extract.
Making the Toffee Base
  1. In a heavy-bottomed saucepan, combine butter, sugar, salt, and water over medium heat. Stir constantly for about 10-15 minutes until the mixture reaches a deep golden color and a temperature of 300°F on a candy thermometer.
  2. Remove from heat and stir in the vanilla extract.
Pouring and Spreading
  1. Immediately pour the hot toffee onto the prepared baking dish and use a heat-resistant spatula to spread it evenly.
Adding Chocolate
  1. While the toffee is still warm, sprinkle the chocolate chips over the surface. Allow them to sit for about 2 minutes, then use a spatula to spread the melted chocolate over the toffee base.
Sprinkling Nuts
  1. Sprinkle your choice of chopped nuts over the melted chocolate and gently press them in.
Cooling
  1. Allow the toffee to cool at room temperature for about 2 hours, or refrigerate for 30 minutes. Once hardened, break the toffee into bite-sized pieces.
