- In a large mixing bowl, whisk together olive oil, lemon juice, minced garlic, broth, oregano, salt, and black pepper until well combined.
- Cut your yellow potatoes into wedge shapes and place them in a baking dish. Pour the lemony broth mixture over the potatoes and arrange the wedges cut side down in a single layer.
