Preparation Steps
- Preheat your oven to 350°F (175°C). Bring a pot of water to a boil and add diced zucchini. Cook for about 3 minutes, then drain and cool.
- In a mixing bowl, combine cooled zucchini with mayonnaise, shredded cheddar cheese, eggs, pepper, and garlic powder. Mix well.
- Grease a 1.5-quart baking dish and pour the zucchini mixture in, spreading it evenly.
- Melt butter and mix it with Panko breadcrumbs. Sprinkle this mixture evenly over the casserole.
- Bake uncovered for 35 to 45 minutes until fork-tender and the top is golden brown.
