For the Topping
  • 1 cup Panko Breadcrumbs Regular breadcrumbs or crushed crackers can be used
  • 2 tablespoons Butter Melted

Preparation Steps
  1. Preheat your oven to 350°F (175°C). Bring a pot of water to a boil and add diced zucchini. Cook for about 3 minutes, then drain and cool.
  2. In a mixing bowl, combine cooled zucchini with mayonnaise, shredded cheddar cheese, eggs, pepper, and garlic powder. Mix well.
  3. Grease a 1.5-quart baking dish and pour the zucchini mixture in, spreading it evenly.
  4. Melt butter and mix it with Panko breadcrumbs. Sprinkle this mixture evenly over the casserole.
  5. Bake uncovered for 35 to 45 minutes until fork-tender and the top is golden brown.
