- In a small bowl, combine light soy sauce, dark soy sauce, sugar, and white pepper powder. Stir until sugar dissolves. Set aside.
- Heat butter in a skillet over medium-high heat. Pour in beaten eggs and scramble until mostly cooked. Set aside.
- Add overnight jasmine rice, breaking up clumps. Stir-fry for 3-4 minutes until heated through and slightly crispy.
- Drizzle prepared sauce over the rice, stir continuously for 2-3 minutes to coat.
- Mix in scrambled eggs and chopped green onions. Season with salt as needed and serve hot.
