For the Sauce
  • 2 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon sugar
  • a pinch white pepper powder
For the Fried Rice
  • 2 tablespoons butter can be substituted for chicken fat
  • 2 eggs beaten
  • 2 cups overnight jasmine rice cold, non-sticky rice works best
  • 2 tablespoons green onions finely chopped
  • to taste salt

Method
 

Step-by-Step Instructions
  1. In a small bowl, combine light soy sauce, dark soy sauce, sugar, and white pepper powder. Stir until sugar dissolves. Set aside.
  2. Heat butter in a skillet over medium-high heat. Pour in beaten eggs and scramble until mostly cooked. Set aside.
  3. Add overnight jasmine rice, breaking up clumps. Stir-fry for 3-4 minutes until heated through and slightly crispy.
  4. Drizzle prepared sauce over the rice, stir continuously for 2-3 minutes to coat.
  5. Mix in scrambled eggs and chopped green onions. Season with salt as needed and serve hot.
