Preparation Steps
  1. Combine diced tomatoes, sliced basil, garlic oil, and a pinch of salt and pepper in a mixing bowl. Let it rest for 5-10 minutes.
  2. Heat a skillet over medium heat and drizzle garlic oil. Toast the bread slices for 1-2 minutes on each side until golden brown.
  3. Mash roasted garlic confit until creamy to use as a base for each toast.
  4. Spread the mashed roasted garlic confit generously over each toasted bread slice.
  5. Top each slice with a generous amount of the tomato-basil mixture.
  6. Drizzle additional garlic oil and sprinkle with flaky sea salt or fresh basil if desired.
  7. Serve immediately on a platter while warm.
