Method
 

Baking Instructions
  1. Preheat your oven to 350°F (177°C) and line two baking sheets with parchment paper.
  2. Cream together the butter, pumpkin puree, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg yolk and vanilla extract, mixing until fully incorporated.
  4. Whisk together the baking soda, salt, cream of tartar, ground cinnamon, pumpkin pie spice, and flour. Gradually stir this into the wet ingredients until a soft dough forms.
  5. Mix together granulated sugar and pumpkin pie spice for the coating.
  6. Scoop 2-tablespoon sized balls of dough, roll in the spiced sugar mixture, and place on baking sheets.
  7. Bake for 12-15 minutes until puffy and slightly cracked on top.
  8. Allow cookies to cool on baking sheets for 5 minutes before transferring to an airtight container.
