Cover the bowl with a towel and let the dough rest for 30 minutes.
  2. Shape the Cookies: Preheat your oven to 350°F (175°C). Lightly flour your work surface, then take pieces of the rested dough and roll them into long ropes, about 1/2 inch thick. Cut the ropes into 1.5-inch diamond shapes and place them on a parchment-lined baking sheet, ensuring they are spaced about an inch apart.
