- In a medium bowl, mash the fresh raspberries with a fork until they’re thoroughly smooth.
- Add in the maple syrup or honey along with the chia seeds. Stir the mixture well until everything is combined and let it rest for 15 minutes.
- Using a 1/4 cup measuring scoop, portion the raspberry mixture onto a parchment-lined baking sheet; space the scoops about an inch apart.
- Place the baking sheet in the freezer for approximately 20 minutes, or until the raspberry bites are firm to the touch.
- Melt the dark chocolate in a microwave-safe bowl, heating in 30-second intervals, stirring until completely smooth.
- Dip each frozen raspberry bite into the melted chocolate, ensuring they're fully coated on all sides.
- Return the chocolate-coated bites to the freezer for about 10–15 minutes, or until the chocolate has fully hardened.
- Store them in an airtight container in the freezer for up to four weeks.
