Method
 

Step-by-Step Instructions
  1. Crush chocolate-covered butter cookies into fine crumbs and mix with Irish Cream in a large bowl.
  2. Add mascarpone cheese to the crumb mixture and blend gently until smooth.
  3. Use a cookie scoop to form small balls from the mixture and place on a parchment-lined tray. Freeze for 45 minutes.
  4. Melt white chocolate over low heat, stirring until smooth.
  5. Coat each cheesecake ball in melted white chocolate, then refrigerate for 1 hour to set.
  6. Melt dark chocolate and drizzle over the set white chocolate coating.
  7. Allow the dark chocolate to set at room temperature for at least 30 minutes.
