Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Crush Biscoff cookies into fine crumbs and combine with melted butter. Press into the bottom of a 9" springform pan and chill.
  2. Melt unsalted butter and mix with flour, rolled oats, and brown sugar until crumbly. Set aside.
  3. Peel, core, and slice tart apples. Sauté with brown sugar and cinnamon, then stir in cornstarch until tender. Cool.
  4. Blend softened cream cheese and sugar until smooth. Add Greek yogurt, vanilla, spices, and eggs, blending until combined.
  5. Pour cheesecake batter over crust, layer sautéed apples, and sprinkle crumble topping evenly.
  6. Bake at 325°F (163°C) for 65-70 minutes until slightly jiggly in the center. Cool for 30 minutes, then refrigerate for at least 6 hours.
