- Preheat your oven to 350°F (175°C). Crush Biscoff cookies into fine crumbs and combine with melted butter. Press into the bottom of a 9" springform pan and chill.
- Melt unsalted butter and mix with flour, rolled oats, and brown sugar until crumbly. Set aside.
- Peel, core, and slice tart apples. Sauté with brown sugar and cinnamon, then stir in cornstarch until tender. Cool.
- Blend softened cream cheese and sugar until smooth. Add Greek yogurt, vanilla, spices, and eggs, blending until combined.
