For the Pasta
  • 8 ounces pasta penne, rigatoni, or fusilli
For the Steak
  • 1 pound steak cut into bite-sized pieces (sirloin or ribeye recommended)
For the Base
  • 1 tablespoon olive oil for searing the steak and sautéing aromatics
  • 1 small onion diced; can substitute with shallots
  • 2 cloves garlic minced
For the Sauce
  • 1 cup heavy cream substitute with half-and-half for a lighter version
  • 1 cup truffle Gouda cheese shredded
  • 1 cup mozzarella cheese shredded; opt for low-moisture
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon crushed red pepper flakes optional
For Garnish
  • 0.25 cup fresh parsley chopped

Equipment

  • Large pot
  • large skillet
  • Baking dish

Method

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Sear steak pieces for 3-4 minutes until browned. Remove and set aside.
  3. In the same skillet, sauté diced onion for 2-3 minutes until translucent. Add minced garlic and cook for another 30 seconds.
  4. Pour in heavy cream and stir to combine. Gradually add truffle Gouda and mozzarella, stirring until melted. Season with salt, pepper, and crushed red pepper flakes.
  5. Return steak to skillet and coat with sauce. Add cooked pasta and mix gently to ensure pasta is covered in sauce.
  6. Preheat oven to 375°F (190°C). Transfer mixture to a greased baking dish and spread evenly. Bake for 15-20 minutes until golden and bubbly.
  7. Allow to rest for a few minutes. Garnish with fresh parsley and serve warm.
