- Whisk together marinade ingredients in a bowl: olive oil, lime zest and juice, honey, minced garlic, cumin, and salt and pepper.
- Marinate the chicken breasts in the marinade for at least 20 minutes.
- Prepare cooked white or jasmine rice according to package instructions.
- Heat a skillet or grill pan and add olive oil to sear the chicken.
- Cook the marinated chicken for 5-6 minutes on each side until golden brown and fully cooked.
- Let the chicken rest for about 5 minutes, then slice into strips.
- Dice avocados and toss with salt and cilantro just before serving.
- Assemble the stack with rice at the bottom, topped with chicken, seasoned avocado, and optional cherry tomatoes.
