For the Rice Base
  • 2 cups Cooked White/Jasmine Rice Light and fluffy
For the Toppings
  • 2 pieces Avocados Diced, added fresh
  • 1 tablespoon Fresh Cilantro Chopped for freshness
  • 1/2 cup Cherry Tomatoes Optional, finely chopped

Method
 

Step-by-Step Instructions
  1. Whisk together marinade ingredients in a bowl: olive oil, lime zest and juice, honey, minced garlic, cumin, and salt and pepper.
  2. Marinate the chicken breasts in the marinade for at least 20 minutes.
  3. Prepare cooked white or jasmine rice according to package instructions.
  4. Heat a skillet or grill pan and add olive oil to sear the chicken.
  5. Cook the marinated chicken for 5-6 minutes on each side until golden brown and fully cooked.
  6. Let the chicken rest for about 5 minutes, then slice into strips.
  7. Dice avocados and toss with salt and cilantro just before serving.
  8. Assemble the stack with rice at the bottom, topped with chicken, seasoned avocado, and optional cherry tomatoes.
  9. Serve warm with your favorite side.
