- Pat chicken thighs dry with paper towels and season with salt and pepper.
- Heat a skillet over medium-high heat and add cooking oil. Sear chicken thighs for 4-5 minutes until golden brown, then flip to sear the other side.
- Reduce heat to medium and add minced garlic to the skillet. Stir constantly for about 30 seconds until fragrant.
- Pour in honey, soy sauce, and vinegar into the skillet. Scrape up any brown bits and let the mixture bubble.
- Return chicken to the skillet, ensuring it's submerged in sauce. Cover and simmer for 5-7 minutes until cooked through.
- Remove from heat and let chicken rest for a couple of minutes before serving.
