Step-by-Step Instructions
  1. Wash oranges thoroughly under cold water and peel them carefully, avoiding the white pith. Slice the peels into 1/4-inch strips.
  2. Place the sliced peels into a medium pot and cover with cold water. Bring to a boil then simmer for about 10 minutes. Drain and repeat this boiling process two more times.
  3. In the same pot, combine 1 cup of water and 1 cup of granulated sugar. Heat over medium, stirring until sugar dissolves, then bring to a gentle boil.
  4. Add boiled orange peels to the syrup and reduce heat. Cook gently for 45 minutes, stirring occasionally until peels are translucent.
  5. Transfer candied peels onto a parchment-lined cooling rack. Spread them out to prevent sticking and let cool for several hours or overnight.
  6. Once cooled, roll in extra sugar or drizzle with chocolate if desired. Store in an airtight container.
