  • 2 cups Kodiak pancake mix or any protein-rich pancake mix
  • 1 cup Ground sausage turkey or chicken sausage for leaner option
  • 1 cup Milk preferably Fairlife milk for added protein
  • 2 large Eggs essential for binding
  • 1 4 cup substitute with honey if preferred
  • 1 cup Shredded cheese (cheddar or Colby jack) or a dairy-free cheese alternative
Optional Additions
  • 1 cup Chopped vegetables like sautéed spinach or bell peppers
  • Fresh herbs such as chives or parsley
  • Different pancake mixes like blueberry or chocolate chips

Method
 

Directions
  1. Preheat the oven to 400°F (200°C) and spray the muffin tin with cooking oil.
  2. Mix Kodiak pancake mix, milk, eggs, and maple syrup until smooth.
  3. Fold in pre-cooked and crumbled sausage and shredded cheese into the batter.
  4. Fill each mini muffin cup about three-quarters full with the batter.
  5. Bake for approximately 15 minutes until tops are golden brown.
  6. Cool muffins in the tin for 5 minutes before transferring to a wire rack.
