Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine 1 cup of plain Greek yogurt, ½ cup of natural peanut butter, 2 tablespoons of honey or maple syrup, and ½ teaspoon of vanilla extract. Stir the mixture until smooth and creamy.
  2. Line a baking sheet with parchment paper.
  3. Using a cookie scoop or spoon, drop bite-sized portions of the mixture onto the prepared baking sheet.
  4. Carefully place the baking sheet in the freezer and allow the bites to freeze for 1 to 2 hours.
  5. Place ¾ cup of dark chocolate chips and 1 teaspoon of coconut oil in a microwave-safe bowl. Heat in the microwave in 30-second intervals, stirring until smooth.
  6. Once your bites are frozen, dip each one into the melted chocolate or drizzle chocolate over the top.
  7. Place the chocolate-coated bites back into the freezer for another 10 to 15 minutes.
  8. Once set, your delicious bites are ready to enjoy! Serve them directly from the freezer.
