Method
 

Crepe Instructions
  1. In a blender, combine 1 cup of cottage cheese, 3 large eggs, 1 cup of whole wheat flour, 3/4 cup of milk, 1 teaspoon of vanilla extract, and a pinch of salt. Blend on medium-high speed for about 30 seconds until you achieve a smooth, creamy batter.
  2. After blending, let the batter rest for 5-10 minutes.
  3. While the batter rests, preheat a nonstick skillet over medium heat. Lightly grease the surface with coconut oil or cooking spray.
  4. Pour 1/4 cup of batter into the center of the skillet, immediately swirling it to spread into a thin, even layer. Cook for about 1-2 minutes.
  5. Once the edges are crisp and golden, use a spatula to gently flip the crepe. Cook the other side for an additional minute.
  6. Transfer the cooked crepe to a plate and cover loosely with a kitchen towel. Repeat the process with the remaining batter.
