- Heat 2 tablespoons of extra virgin olive oil in a large Dutch oven over medium-high heat until shimmering, about 1-2 minutes.
- Add 1 finely chopped onion and 3 minced garlic cloves; sauté for 2-3 minutes until the onion becomes translucent.
- Add 2 chopped carrots and 2 chopped celery stalks to the pot; sauté for another 2 minutes until softened.
