Step-by-Step Instructions
  1. Heat 2 tablespoons of extra virgin olive oil in a large Dutch oven over medium-high heat until shimmering, about 1-2 minutes.
  2. Add 1 finely chopped onion and 3 minced garlic cloves; sauté for 2-3 minutes until the onion becomes translucent.
  3. Add 2 chopped carrots and 2 chopped celery stalks to the pot; sauté for another 2 minutes until softened.
  4. Stir in 2 tablespoons of organic tomato paste, 1 tablespoon of 'On Everything' blend, and 1 teaspoon of smoked paprika; sauté for 1-2 minutes.
  5. Sprinkle in 1 tablespoon of organic all-purpose flour and mix thoroughly for about 1 minute.
  6. Gradually stir in 4 cups of organic vegetable stock, bring to a gentle simmer, about 2-3 minutes.
  7. Add 1 can of organic white beans, 2 cups of cubed sweet potatoes, 2 cups of cubed potatoes, and 3 fresh thyme sprigs; stir well.
  8. Simmer over low heat for 20-25 minutes, or until sweet potatoes are tender.
  9. Taste and adjust seasoning with sea salt and smoked paprika before serving hot.
