  • 1 pound turkey sausage or vegetarian sausage
  • 6 eggs
  • 1 cup milk or non-dairy milk
  • 1 medium onion diced
  • 1 medium green pepper diced
  • 2 cloves garlic minced
  • 1 teaspoon thyme fresh or dried
  • 1 cup cheese cheddar, Monterey Jack, or your favorite
  • 1 tablespoon avocado oil or olive oil

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Chop the sweet potatoes, onion, green pepper, and garlic into uniform pieces.
  3. Grease a 9x13-inch casserole dish with avocado oil.
  4. Heat a Dutch oven over medium heat, add avocado oil, and sauté onions and green peppers until softened.
  5. Add sweet potatoes and sauté for 8-9 minutes, then add minced garlic during the last minute.
  6. Transfer sautéed vegetables to the greased casserole dish.
  7. In the same Dutch oven, cook the turkey sausage until browned, about 5-7 minutes.
  8. Combine the turkey sausage with the vegetables in the casserole dish.
  9. Whisk together eggs, milk, thyme, salt, pepper, and cheese in a separate bowl.
  10. Pour the egg mixture over the sausage and vegetable mixture in the casserole dish.
  11. Bake in the preheated oven for 40-45 minutes.
  12. Let the casserole cool for about 15 minutes before serving.
