- Wash and peel the potatoes, then thinly slice them into even rounds or half-moons, about 1/4 inch thick. Soak in cold water for 10-15 minutes, drain, and pat dry.
- Heat olive oil in a large skillet over medium heat. Add potato slices in a single layer and fry for 10-15 minutes, flipping occasionally until golden brown and crispy.
- Push potatoes to one side of the skillet. Crack the eggs into the empty side and cook for 3-5 minutes to desired doneness.
- Sprinkle shredded cheese over the eggs, cover, and let cook on low heat for 2-3 minutes until the cheese melts.
- Mix the fried potatoes with the eggs and melted cheese. Serve immediately.
