  • 1 pound Ground Turkey can substitute with ground chicken or lean beef
  • 2 medium Zucchini yellow squash or eggplant can be used
  • 2 cups Shredded Mozzarella Cheese consider cheddar or lactose-free cheese if needed
  • 1 medium Chopped Onion shallots or green onions can substitute
  • 2 cloves Minced Garlic fresh garlic preferred
  • 1 14 oz can Diced Tomatoes drained, fresh tomatoes can be used if chopped small
  • 1 tablespoon Dried Italian Herbs substitute with oregano or basil if preferred
  • Salt to taste Salt & Black Pepper
  • 1 tablespoon Olive Oil avocado oil or butter can be used for frying

Method
 

Step‑by‑Step Instructions for Ground Turkey Zucchini Casserole
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with a drizzle of olive oil.
  2. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing them for about 2 minutes until the onion turns translucent.
  3. Add the ground turkey to the skillet and sauté for 5-6 minutes, or until the turkey is no longer pink and lightly browned.
  4. Stir in the drained diced tomatoes, dried Italian herbs, salt, and black pepper into the skillet. Allow this mixture to simmer for 3-4 minutes.
  5. Layer half of the sliced zucchini at the bottom of the greased baking dish, followed by half of the turkey mixture and half of the mozzarella cheese. Repeat the layers.
  6. Place the assembled casserole into your preheated oven and bake uncovered for 30-35 minutes until the cheese is bubbly and golden brown.
  7. Allow the casserole to cool for about 5 minutes before serving for easier portioning.
