- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat and cook the ground turkey with salt, pepper, paprika, and thyme for 5-7 minutes until browned.
- Add diced onion and bell pepper to the skillet and sauté for about 5 minutes until the onion is translucent.
- Stir in fresh spinach or kale and cook until it wilts, about 2-3 minutes.
- Combine the turkey-vegetable mixture with cubed sweet potatoes in a large mixing bowl.
