Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat and cook the ground turkey with salt, pepper, paprika, and thyme for 5-7 minutes until browned.
  3. Add diced onion and bell pepper to the skillet and sauté for about 5 minutes until the onion is translucent.
  4. Stir in fresh spinach or kale and cook until it wilts, about 2-3 minutes.
  5. Combine the turkey-vegetable mixture with cubed sweet potatoes in a large mixing bowl.
  6. Transfer the mixture into a greased baking dish, spreading it evenly.
