- In a large mixing bowl, blend the ginger slices, pressed garlic, regular soy sauce, dark soy sauce, coconut cream, sugar, and oyster sauce until smooth. Set it aside.
- Cut the chicken into 1-inch cubes and add to the marinade, ensuring each piece is well-coated. Let it marinate for 1-2 hours or overnight.
- Soak wooden skewers in water for 30 minutes to prevent burning. Thread marinated chicken pieces tightly onto the skewers.
- Preheat your grill to a high temperature of 500°F (260°C). Grill skewers for about 15-18 minutes, flipping every 2-3 minutes.
- In the last few minutes of grilling, brush the chicken skewers with a glaze of coconut cream, honey, and soy sauce.
- In a separate bowl, combine peanut butter, rice vinegar, curry paste, and sweetener with enough water for desired thickness.
- Serve the skewers on a bed of fresh lettuce with the homemade peanut sauce on the side.
