Preparation Steps
  1. In a large mixing bowl, blend the ginger slices, pressed garlic, regular soy sauce, dark soy sauce, coconut cream, sugar, and oyster sauce until smooth. Set it aside.
  2. Cut the chicken into 1-inch cubes and add to the marinade, ensuring each piece is well-coated. Let it marinate for 1-2 hours or overnight.
  3. Soak wooden skewers in water for 30 minutes to prevent burning. Thread marinated chicken pieces tightly onto the skewers.
  4. Preheat your grill to a high temperature of 500°F (260°C). Grill skewers for about 15-18 minutes, flipping every 2-3 minutes.
  5. In the last few minutes of grilling, brush the chicken skewers with a glaze of coconut cream, honey, and soy sauce.
  6. In a separate bowl, combine peanut butter, rice vinegar, curry paste, and sweetener with enough water for desired thickness.
  7. Serve the skewers on a bed of fresh lettuce with the homemade peanut sauce on the side.
