For the Tostadas
  • 8 Corn Tortillas or flour tortillas
  • 1 can Refried Beans or black beans
  • 2 cups Shredded Lettuce or spinach/cabbage
  • 1 cup Diced Tomatoes or salsa/pico de gallo
  • 1 cup Sliced Radishes optional
  • 1 cup Grated Cheese e.g., cheddar/Monterey Jack, or vegan cheese
  • 1 cup Sour Cream or Greek yogurt
  • 1/4 cup Chopped Fresh Cilantro or parsley
  • 2 Lime Wedges for serving

Method
 

Step-by-Step Instructions
  1. In a small bowl, whisk together olive oil, lime juice, chili powder, cumin, garlic powder, onion powder, and a generous pinch of salt and pepper.
  2. Coat the chicken breasts in the marinade and refrigerate for at least 30 minutes, up to 2 hours.
  3. Preheat the grill to medium-high heat, around 400°F.
  4. Grill the marinated chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F.
  5. Remove the chicken and let it rest for 5 minutes before slicing.
  6. Grill corn tortillas for 1-2 minutes on each side until crispy.
  7. Spread refried beans on each tortilla, then layer with sliced chicken, lettuce, tomatoes, and radishes.
  8. Top with grated cheese and a dollop of sour cream.
  9. Garnish with cilantro and serve with lime wedges.
