Step-by-Step Instructions for Grilled Mediterranean Veggie Quesadillas
  1. Preheat a skillet or grill pan over medium heat for about 5 minutes.
  2. Toss zucchini, red bell pepper, and red onion in a bowl with olive oil, salt, pepper, and dried oregano, then sauté in the hot skillet for 3-4 minutes.
  3. Lay one tortilla flat in the skillet and sprinkle half of the shredded mozzarella over it.
  4. Distribute sautéed veggies, sun-dried tomatoes, olives, feta, and optional greens evenly over the cheese.
  5. Place another tortilla on top, sprinkle with remaining mozzarella, and press gently with a spatula.
