Preparation Steps
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine ground beef, breadcrumbs, parsley, Parmesan, garlic powder, oregano, cumin, cinnamon, salt, and black pepper. Mix well.
- Shape about a tablespoon of the mixture into 1 to 1.5-inch meatballs, aiming for around 18–24 meatballs.
- Line a baking sheet with parchment paper and arrange the meatballs, drizzling with olive oil.
- Bake for 15-20 minutes until firm and golden brown.
- Prepare the rice according to package instructions.
- In a separate bowl, combine cherry tomatoes, cucumber, red onion, and Kalamata olives. Toss gently.
- Assemble the bowls with rice, veggie mixture, meatballs, tzatziki, and fresh lemon juice.
