  • 2 cups Cooked White Rice Can substitute with quinoa or couscous.
  • 1 cup Cherry Tomatoes Can substitute with diced bell peppers.
  • 1 medium Cucumber Zucchini can be used as an alternate.
  • 1 small Red Onion Shallots can be used for a milder flavor.
  • 1/2 cup Kalamata Olives Green olives are an option, or omit.
  • 1 cup Tzatziki Sauce Consider a yogurt-lemon-garlic blend as a substitute.
  • 1 tbsp Fresh Lemon Juice Drizzle before serving.

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground beef, breadcrumbs, parsley, Parmesan, garlic powder, oregano, cumin, cinnamon, salt, and black pepper. Mix well.
  3. Shape about a tablespoon of the mixture into 1 to 1.5-inch meatballs, aiming for around 18–24 meatballs.
  4. Line a baking sheet with parchment paper and arrange the meatballs, drizzling with olive oil.
  5. Bake for 15-20 minutes until firm and golden brown.
  6. Prepare the rice according to package instructions.
  7. In a separate bowl, combine cherry tomatoes, cucumber, red onion, and Kalamata olives. Toss gently.
  8. Assemble the bowls with rice, veggie mixture, meatballs, tzatziki, and fresh lemon juice.
