  • ¼ cup Red Onion Thinly sliced, soak in ice water if strong
  • ¼ cup Fresh Mint Leaves Chopped, or substitute with basil
For the Dressing
  • ¼ cup Olive Oil
  • 2 tablespoons Balsamic Vinegar
  • 1 tablespoon Honey Can substitute with maple syrup
  • 1 teaspoon Dijon Mustard Or whole grain mustard for texture

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Spread the pecans in a single layer on a baking sheet and toast them for 5-7 minutes.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, honey, and Dijon mustard. Season with salt and pepper.
  3. Rinse the strawberries, hull and slice. Thinly slice the red onion and soak in ice water if needed. Chop mint leaves.
  4. In a mixing bowl, layer the mixed greens, then add strawberries, pecans, onion, and feta.
  5. Drizzle the dressing over the salad and gently toss to combine. Serve immediately.
