- Preheat your oven to 375°F (190°C) and prepare a loaf pan by greasing it or lining with parchment paper.
- In a skillet, heat olive oil over medium and sauté diced onions and minced garlic until soft, about 5 minutes. Let cool.
- In a large mixing bowl, combine ground beef, breadcrumbs, beaten eggs, milk, Worcestershire sauce, Dijon mustard, ketchup, salt, black pepper, and smoked paprika. Gently fold in cooled onion and garlic mixture.
- Transfer the meat mixture into the loaf pan and shape it into a loaf, smoothing the top.
- Prepare the glaze in a separate bowl by whisking together ketchup, brown sugar, Dijon mustard, Worcestershire sauce, and apple cider vinegar. Spoon a thin layer over the meatloaf.
- Bake the meatloaf uncovered for 45 minutes, brush with more glaze, and return to the oven for an additional 15 minutes. Check internal temperature is 160°F (71°C).
- Remove from oven and let rest for 10 minutes before slicing and serving, optionally garnished with fresh parsley.
