Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a loaf pan by greasing it or lining with parchment paper.
  2. In a skillet, heat olive oil over medium and sauté diced onions and minced garlic until soft, about 5 minutes. Let cool.
  3. In a large mixing bowl, combine ground beef, breadcrumbs, beaten eggs, milk, Worcestershire sauce, Dijon mustard, ketchup, salt, black pepper, and smoked paprika. Gently fold in cooled onion and garlic mixture.
  4. Transfer the meat mixture into the loaf pan and shape it into a loaf, smoothing the top.
  5. Prepare the glaze in a separate bowl by whisking together ketchup, brown sugar, Dijon mustard, Worcestershire sauce, and apple cider vinegar. Spoon a thin layer over the meatloaf.
  6. Bake the meatloaf uncovered for 45 minutes, brush with more glaze, and return to the oven for an additional 15 minutes. Check internal temperature is 160°F (71°C).
  7. Remove from oven and let rest for 10 minutes before slicing and serving, optionally garnished with fresh parsley.
