  • 2 medium carrots swap for parsnips or snap peas
  • 1 medium bell pepper any color complements the dish
  • 2 cups bok choy or spinach kale or Swiss chard can be used
  • 4 ounces egg noodles or rice noodles whole wheat or gluten-free rice noodles work as substitutes
  • 2 stalks green onions used as a garnish
  • salt to taste
  • pepper to taste

Method
 

Step-by-Step Instructions
  1. Heat the oil in a large pot over medium heat until shimmering, about 1-2 minutes.
  2. Add the chicken breast, season with salt and pepper, and sauté for 5-7 minutes until golden brown and cooked through.
  3. Remove the chicken and add onion, garlic, and ginger; sauté for 2-3 minutes until fragrant.
  4. Pour in chicken broth and water, bring to a boil over medium heat for about 5 minutes.
  5. Add carrots and bell pepper, cooking for 5 minutes until slightly softened.
  6. Stir in noodles and cook according to package instructions, about 5-7 minutes, until al dente.
  7. In the last 2 minutes, add bok choy or spinach to the pot and stir well.
  8. Taste and adjust seasoning before serving hot.
  9. Ladle into bowls and garnish with sliced green onions.
