- Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
- In a skillet, heat olive oil over medium heat and sauté the diced onion for about 5 minutes until soft.
- In a large bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the grated Parmesan cheese. Mix gently.
- Transfer the mixture to the baking dish and shape it into a loaf, smoothing the top and sides.
- Sprinkle the remaining Parmesan cheese over the top and optionally add paprika or Italian seasoning.
- Bake for 45-50 minutes until the internal temperature reaches 165°F (74°C) and the top is golden brown.
- Let the meatloaf rest for 10 minutes before slicing to allow juices to redistribute.
