Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. In a skillet, heat olive oil over medium heat and sauté the diced onion for about 5 minutes until soft.
  3. In a large bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the grated Parmesan cheese. Mix gently.
  4. Transfer the mixture to the baking dish and shape it into a loaf, smoothing the top and sides.
  5. Sprinkle the remaining Parmesan cheese over the top and optionally add paprika or Italian seasoning.
  6. Bake for 45-50 minutes until the internal temperature reaches 165°F (74°C) and the top is golden brown.
  7. Let the meatloaf rest for 10 minutes before slicing to allow juices to redistribute.
