Preparation Steps
  1. Prepare Rice Noodles: Start by boiling water in a saucepan over medium-high heat. Once boiling, remove from heat and add thin rice noodles, letting them soak for about 3–5 minutes until tender, yet firm to the bite. Drain and rinse with cold water.
  2. Make Peanut Dressing: In a mixing bowl, whisk together creamy peanut butter, hoisin sauce, lime juice, soy sauce, and water until smooth. Adjust water for preferred consistency.
  3. Combine Ingredients: In the large bowl with the noodles, add cucumber, purple cabbage, carrot, red bell pepper, cilantro, and mint. Sprinkle peanuts on top.
  4. Dress the Salad: Drizzle the dressing over the salad mixture and toss gently with tongs until well coated.
  5. Serve: Serve immediately in bowls or lettuce cups. Chill for 15 minutes for better flavor melding.
