Ingredients

  • 16 oz cream cheese full-fat
  • 1 cup granulated sugar or erythritol for low-sugar option
  • 2 tbsp all-purpose flour
  • 4 eggs room temperature
  • 1 egg yolk
  • ½ cup sour cream or Greek yogurt
  • ½ cup heavy cream or coconut cream for dairy-free
  • 1 tbsp vanilla extract clear for lighter color
For the Cake Layers
  • 1 box white cake mix or homemade
  • 1 cup water
  • ½ cup vegetable oil
  • 3 egg whites
  • 1 tbsp red gel food coloring vibrant coloring
  • 1 tbsp blue gel food coloring vibrant coloring
For the Frosting
  • 1 cup unsalted butter room temperature
  • 3-4 cups powdered sugar adjust for sweetness
  • 2-4 tbsp milk or heavy cream to adjust consistency
  • 1 tsp vanilla extract
  • 1 pinch salt balances sweetness

Method
 

Prepare the Cheesecake Layer
  1. In a large mixing bowl, beat cream cheese, granulated sugar, and flour until smooth. Add eggs one at a time, mixing well. Fold in sour cream, heavy cream, and vanilla extract. Pour into greased springform pan and refrigerate overnight.
Make the Cake Batter
  1. Preheat oven to 350°F (175°C). In a bowl, combine white cake mix, water, vegetable oil, and egg whites until smooth. Divide batter, adding the gel food coloring to each bowl to achieve red and blue colors.
Bake the Cake Layers
  1. Grease and flour two 9-inch round pans. Pour blue batter in one and red batter in another. Bake for 25-30 minutes until toothpick comes clean. Cool layers in pans for 10 minutes, then transfer to wire racks.
Make the Frosting
  1. Beat room temperature butter until creamy. Gradually mix in powdered sugar, then add milk and vanilla extract. Beat until fluffy and desired consistency is reached.
Assemble the Cake
  1. Layer the blue cake on a serving plate, frost the top, add the cheesecake layer, then place the red cake layer on top. Frost the sides for a festive appearance.
Decorate and Serve
  1. Decorate with sprinkles or berries as desired. Cut and serve the cake chilled for best results.
